Chia Pudding Success!

By a show of hands who has had an epic fail attempting to make chia pudding. Any one? Just me? Cool. Well I can’t tell you how many times I’ve been sure I got it right. Place it in the fridge overnight, so excited for a ready breakfast in the morning, only to reveal… milk with chia seed in it. What was I doing wrong? Where was the thick goodness these chia seed whisperers were attaining in their recipes??? Well I am pleased to announce: I got it right! Finally. And if any of you have failed with the chia pudding concoction I have the answer to your prayers. after much experimenting I’ve mastered it.IMG_4270

This chia pudding texture is exactly what you would imagine pudding to be like. Not soupy and not jiggly. Just right!

Ingredients:

1/4 c. almond milk (or any milk you prefer)

1/4 c. greek yogurt

3.5 tbs chia seeds

1/4 tsp vanilla

1/2 tsp almond extract (I always add a little extra)

Whisk milk and yogurt together until smooth. add chia seeds and vanilla and almond extract. Let sit for 30 min stirring occasionally. If it appears to runny add more yogurt. Place in the refrigerator overnight for a yummy ready-to-go breakfast!
